# What You'll Need:
→ Lavender Syrup
01 - 1/2 cup water
02 - 1/2 cup granulated sugar
03 - 1 tablespoon dried culinary lavender
→ Latte Base
04 - 2 shots espresso or strong brewed coffee (approximately 2 fluid ounces)
05 - 1 cup whole milk or plant-based milk alternative
06 - 2 tablespoons lavender syrup
→ Whipped Lavender Foam
07 - 1/2 cup cold milk (whole or plant-based)
08 - 1 tablespoon lavender syrup
09 - 1 tablespoon heavy cream (optional, for added richness)
# Directions:
01 - Combine water, granulated sugar, and dried culinary lavender in a small saucepan. Place over medium heat and bring to a gentle simmer, stirring continuously until sugar completely dissolves. Remove from heat source, cover, and allow mixture to steep for 5 minutes to develop floral flavor. Pour through a fine mesh strainer to remove lavender buds, transferring syrup to a heat-safe container. Set aside to cool completely before using.
02 - Extract two shots of espresso using an espresso machine or brew 2 fluid ounces of strong, concentrated coffee using your preferred method. Distribute the hot coffee evenly between two heat-resistant mugs or latte glasses.
03 - Pour 1 cup of whole milk or plant-based alternative into a steaming pitcher. Heat until reaching 150-160°F (steaming but not boiling), then use a milk frother or wire whisk to create a light, velvety microfoam. Stir 1 tablespoon of prepared lavender syrup into each mug containing the espresso, then slowly pour the steamed milk over the back of a spoon to maintain layered presentation.
04 - Combine cold milk, optional heavy cream, and 1 tablespoon lavender syrup in a mixing bowl. Using a handheld milk frother or electric whisk, whip the mixture at high speed until thick, stiff peaks form and texture resembles cloud-like foam. This should take approximately 2-3 minutes of vigorous whisking.
05 - Spoon the whipped lavender foam generously over the surface of each prepared latte, creating a thick topping layer. For an elegant presentation, lightly garnish with a pinch of dried lavender buds. Serve immediately while foam maintains its airy texture.
