I started making kombucha-style mocktails during summer get-togethers, and was surprised by how easy it is to craft a delicious, probiotic-rich drink right at home. Experimenting with different flavor infusions has become a fun kitchen project that everyone wants to help with!

Ingredients

  • Filtered water: 2 liters
  • Black or green tea bags (or loose-leaf tea): 8 bags or 2 tablespoons
  • Granulated sugar: 200 g (1 cup)
  • Kombucha SCOBY or starter liquid: 1 SCOBY or 200 ml unflavored store-bought kombucha
  • Flavoring options: 100 g fresh berries, 1 lemon or lime thinly sliced, 1 small knob fresh ginger sliced, 1 sprig fresh mint or basil, 2 tablespoons fruit juice, 1 tablespoon dried hibiscus petals, 1 cinnamon stick or 3 whole cloves

Instructions

Brew the tea:
Boil filtered water. Add tea and steep for 10 minutes. Remove tea bags or strain leaves.
Add sugar:
Stir in sugar while hot until dissolved. Let cool completely to room temperature.
Combine and ferment:
Pour cooled tea into a clean jar. Add SCOBY and starter liquid.
Cover and ferment:
Cover with a cloth or paper towel. Secure with a rubber band. Store at room temperature for 5–7 days.
Check and taste:
After 5 days, start tasting daily. It is ready when tangy and lightly fizzy.
Flavor and bottle:
Remove SCOBY and reserve 200 ml for future batches. Add chosen fruits, herbs, or spices. Pour into bottles, leaving space at top.
Second fermentation:
Seal bottles and ferment 1–3 days more for carbonation.
Refrigerate:
Once carbonated, refrigerate and strain solids before serving.

Directions

Step 01

Brew the Tea: Bring filtered water to a boil in a large kettle or saucepan. Add tea bags or loose-leaf tea, and steep for 10 minutes. Remove bags or strain out leaves.

Step 02

Sweeten the Tea: While the tea is still hot, stir in the granulated sugar until it is completely dissolved. Allow the sweetened tea to cool to room temperature, as hot liquid can harm the SCOBY.

Step 03

Combine and Start Fermentation: Pour the cooled sweet tea into a sanitized, large glass jar. Add the SCOBY and the starter liquid (or unflavored store-bought kombucha).

Step 04

Cover and Ferment: Cover the jar with a clean cloth or paper towel secured by a rubber band. Store at room temperature, away from direct sunlight, for 5 to 7 days.

Step 05

Monitor and Taste: After 5 days, begin tasting your kombucha daily. When it is tangy and lightly effervescent, but not overly sour, proceed to the next step.

Step 06

Remove SCOBY and Flavor: Remove the SCOBY and 3/4 cup of kombucha for your next batch. Add selected fruits, herbs, or spices directly to the kombucha.

Step 07

Bottle for Secondary Fermentation: Transfer kombucha into clean glass bottles, using a funnel, leaving 1 inch headspace. Seal bottles tightly and ferment at room temperature for an additional 1 to 3 days to increase carbonation.

Step 08

Refrigerate and Serve: Once desired carbonation is achieved, refrigerate bottles. Strain out solid flavorings before serving.
