Pin it The first time I made honey chipotle butter, I was actually trying to make a compound butter for corn on the cob. I ended up with extra and decided to spread it on sourdough for a quick lunch. That accidental sandwich turned out better than anything I had planned. The combination of sweet honey and smoky heat cuts through rich cheddar in ways regular butter never could. Now it is the only way my family will eat grilled cheese.
Last winter my friend came over after a terrible day at work. I made these sandwiches while she sat at my counter complaining about everything. The smell of chipotle and butter filled the kitchen. She took one bite and stopped mid sentence. Sometimes food is the best distraction.
Ingredients
- Unsalted butter softened: Room temperature butter mixes evenly with the honey and creates the most even spread on bread
- Honey: A lighter honey works best here as it caramelizes beautifully without overpowering the chipotle
- Chipotle pepper in adobo: Finely mince the pepper yourself so you control the heat level in every bite
- Adobo sauce: This deep smoky sauce is where most of the flavor lives so do not skip it
- Sourdough bread: The tang and sturdy structure of sourdough holds up perfectly to the rich butter filling
- Sharp cheddar cheese: Grate it yourself for better melting and more intense flavor than pre shredded cheese
Instructions
- Make the honey chipotle butter:
- Mix the softened butter honey minced chipotle adobo sauce and salt in a small bowl until completely smooth. Taste and adjust the chipotle if you want more heat.
- Prepare the bread:
- Spread the honey chipotle butter generously on one side of each sourdough slice. Make sure you cover every inch of the surface for even browning.
- Build the sandwiches:
- Place two slices buttered side down and pile the grated cheddar evenly on top. Top with the remaining slices buttered side up.
- Grill to perfection:
- Cook in a hot skillet over medium heat for 3 to 4 minutes per side. Press gently and flip when the bread turns deep golden brown.
- Rest and serve:
- Let the sandwiches rest for 1 minute before slicing so the cheese sets slightly. Cut diagonally and serve while still hot and crispy.
Pin it My daughter started requesting these for her birthday dinner every year. It makes me laugh that she chooses grilled cheese over anything else I could make. But honestly they are pretty special.
Choosing the Right Cheese
Sharp cheddar provides the best flavor base and melt consistency for this sandwich. I have tried mixing in gouda or pepper jack but they can overwhelm the delicate honey chipotle balance. If you want to experiment keep cheddar as at least two thirds of your cheese blend. The sharper the cheddar the more it stands up to that bold spicy butter.
Bread Matters More Than You Think
Sourdough works because it has structure and a slight tang that complements the rich flavors. Regular white bread gets soggy and whole wheat can be too dense. Look for a sourdough with a good crust and open crumb structure. Day old sourdough actually grills beautifully because it toasts up extra crispy.
Make It Your Own
Once you master the basic formula you can start playing with variations while keeping that honey chipotle butter as the star. Some of my favorite additions still respect the original balance.
- Add thin sliced apple inside the sandwich for crunch and sweetness
- Top the finished sandwich with fresh cilantro for bright contrast
- Swap cheddar for gruyere if you want something more nutty and sophisticated
